Ingredients
- 4 rolls
- 2 Tbs. butter
- 2 cans white tuna, drained
- 1 small apple or 1/2 large apple, chopped
- 2 Tbs. celery, diced fine
- 6 Tbs. mayonnaise
- 2-3 tsp. curry powder
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 Tbs. chopped cilantro
- kale sprouts (optional)
Instructions
- Heat a large frying pan over medium heat. Butter each roll with 1/2 Tbs. butter. Place butter side down in frying pan and toast until brown, about 2-3 minutes. Remove.
- Meanwhile, add the tuna to a medium sized bowl. Add tuna, apple, and celery and mix. Add the mayonnaise and curry powder and stir. Add salt, pepper and cilantro and stir to mix well.
- Add 1/4 tuna mixture to each roll. Top with kale sprouts and serve.
