Yield: 4 Servings

Ingredients
  • 4 rolls
  • 2 Tbs. butter
  • 2 cans white tuna, drained
  • 1 small apple or 1/2 large apple, chopped
  • 2 Tbs. celery, diced fine
  • 6 Tbs. mayonnaise
  • 2-3 tsp. curry powder
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 Tbs. chopped cilantro
  • kale sprouts (optional)
Instructions
  1. Heat a large frying pan over medium heat. Butter each roll with 1/2 Tbs. butter. Place butter side down in frying pan and toast until brown, about 2-3 minutes. Remove.
  2. Meanwhile, add the tuna to a medium sized bowl. Add tuna, apple, and celery and mix. Add the mayonnaise and curry powder and stir. Add salt, pepper and cilantro and stir to mix well.
  3. Add 1/4 tuna mixture to each roll. Top with kale sprouts and serve.
